NEW ORLEANS, LA. (October 14, 2008) - Ti Adelaide Martin and Chef Tory McPhail "hooked" a great idea and now it has finally been released: Commander's Wild Side: Bold Flavors for Fresh Ingredients from the Great Outdoors (HarperCollins, $29.95), a cookbook from a leading restaurateur and chef of one of America's most venerable restaurants, is available in bookstores nationwide and online today. Outdoor enthusiasts know sky, sea, fields and forests offer some of the richest gastronomic bounty. But for those who love the taste of the wild and who haven't the opportunity or desire to catch their own meals, will still delight in Commander's Wild Side. Whether you round up your quail and trout directly from the countryside or from the local supermarket, Commander's Wild Side is the ultimate gift for both the outdoorsman and the cook looking for fresh, simple recipes.

Established in 1880 and led by the Brennan family since 1969, Commander's Palace is one of New Orleans' legendary residences of haute Creole cuisine and a champion of locally and regional sourced ingredients. In Commander's Wild Side, Co-Owner Ti Adelaide Martin and Executive Chef Tory McPhail present over 100 easy, approachable recipes using fresh-caught ingredients from America's lakes, streams and backcountry.

Ideal for outdoor enthusiasts looking to set up impromptu cooking areas in the midst of marshes, or beneath a roof of spruce and pine, as well as those whose experience of the outdoors consists of firing up the grill on the back deck, Ti and Chef Tory provide recipes for dishes using fare both expected and unexpected: Jamaican Conch Callaloo; Juniper Berry Grilled Elk; Buttermilk Fried Rabbit Salad; Garlic and Rosemary-Studded Wild Boar Roast and many, many more. They also provide non-game substitutions for those occasional moments when your grocer runs out of elk, as well as recipes for more traditional yet equally flavorful dishes such as Lemon and Garlic Grilled Pork, Soft-Shell Crab Bisque and Fried Turkey.

So whether you're regularly up at four AM to load up the boat and get the dog in the truck, or if the butcher's counter is as far into the wilderness as you'd like to head, go ahead and let Ti and Tory help you find a new favorite, perk up an old familiar, and have fun either way.Commander's Wild Side is available for purchase in bookstores nationwide and through Amazon.com, CommandersPalace.com and IntheLandofCocktails.com.

ABOUT THE AUTHORS
Ti Adelaide Martin is co-owner of the Commander's Palace Family of Restaurants, with restaurants in New Orleans, Houston and Destin, Florida. Ti is also the co-author of the Commander's Kitchen Cookbook and In the Land of Cocktails. She lives in New Orleans, La.

Tory McPhail is the executive chef of Commander's Palace in New Orleans. A 33-year-old maverick and James Beard Rising Star Chef nominee during his first year at the helm of Commander's Palace in 2002, Tory has followed a hard-working and unspoiled path to arrive at the heralded restaurant's storied chef dais, which cultivated the celebrated likes of Emeril Lagasse, Paul Prudhomme and Jamie Shannon.

Tory was also formerly the co-host of Turner South's original weekly series, "Off the Menu", a show featuring Tory, along with sous-chefs and cooks from Commander's Palace, who traveled around the South from Louisiana bayous to Florida's deep waters to hunt and fish and bring back the day's catch to the Commander's Palace kitchen. He lives in New Orleans, La.
