THE AUTHORS
Ti Adelaide Martin is co-owner of the Commander's Palace Family
of Restaurants, with restaurants in New Orleans, Houston and
Destin, Florida. Ti is also the co-author of the Commander's
Kitchen Cookbook and In the Land of Cocktails. She lives in
New Orleans, La.
Tory
McPhail is the executive chef of Commander's Palace in New Orleans.
A 33-year-old maverick and James Beard Rising Star Chef nominee
during his first year at the helm of Commander's Palace in 2002,
Tory has followed a hard-working and unspoiled path to arrive
at the heralded restaurant's storied chef dais, which cultivated
the celebrated likes of Emeril Lagasse, Paul Prudhomme and Jamie
Shannon.
Tory
was also formerly the co-host of Turner South's original weekly
series, "Off the Menu", a show featuring Tory, along
with sous-chefs and cooks from Commander's Palace, who traveled
around the South from Louisiana bayous to Florida's deep waters
to hunt and fish and bring back the day's catch to the Commander's
